A Wine Night Showstopper: Smoky, Creamy, Flaky Perfection
If you’ve ever attended a Spicy Vines wine release party, you know we don’t just pour exceptional wine — we host. And food is always a big part of that experience. This next recipe is one of the stars of our summer event: Smoked Salmon & Goat Cheese Phyllo Bites.
Created by our culinary partner-in-crime Maria, these elegant, crowd-pleasing bites bring together flaky phyllo, smoky salmon, and a herbed goat cheese filling that practically begs for a chilled glass of wine.
Smoked Salmon & Herbed Goat Cheese Phyllo Bites
Make the Cups:
– Stack 4 phyllo sheets, brushing butter between each layer.
– Cut into 3–4” squares, press into muffin tins.
– Bake at 375°F for about 5 minutes until golden. Remove and cool.
Whip the Filling:
– In a food processor, blend goat cheese, capers, dill, lemon zest, honey, olive oil, salt, and pepper until smooth.
Assemble:
– Spoon or pipe the filling into each cup.
– Top with flaked smoked salmon and garnish with capers, dill, or chives.

Wine Pairing: Violet Rosé
Our Violet Rosé is one of our most versatile wines, and it stole the show at the party when paired with these salmon bites.
Why it works:
– The rosé’s lively fruit and floral notes soften the smokiness of the salmon.
– Its bright acidity cuts through the richness of goat cheese and phyllo.
– It adds elegance and lift, without overpowering the dish.
This pairing is light, layered, and exactly the kind of flavor moment that makes Spicy Vines events so memorable.
