Instructions
Poach the Pears
– In a saucepan, combine wine, sugar, vanilla, rosemary, and cinnamon stick. Bring to a boil. Lower to a simmer and gently add pear halves.
– Poach for 10 minutes, flip, then poach the other side for another 10 minutes until fork-tender. Turn off heat and let pears soak in liquid for 30 minutes.
– Remove pears with a slotted spoon. Bring remaining poaching liquid to a boil, then reduce to simmer uncovered for ~20 minutes or until thickened into a syrup.
Make the Spiced Walnuts
– Preheat oven to 420°F. In a bowl, mix melted butter, brown sugar, cinnamon, nutmeg, and walnuts. Spread on a parchment-lined baking sheet and bake for 10–15 minutes, turning once, until golden and fragrant.
Make the Mascarpone Filling
– Using a mixer, whip cream cheese, yogurt, sour cream, whipping cream, honey, rosemary, and lemon zest until light and fluffy.
Plate & Serve
– Place pear halves on a plate. Add a spoonful of mascarpone filling into the core of each pear. Drizzle with reduced wine syrup and top with spiced walnuts. Garnish with fresh rosemary if desired.
