INGREDIENTS

– 20 dried apricots
– 2 oz goat cheese
– ¼ cup rough chopped raw almonds
– 1 tablespoon butter
– Fresh chopped thyme

Paired with Spicy Vines’ Jubilé

Servings: 10 people, 2 per person

Instructions

– Sautee chopped almonds in butter with a pinch of salt until toasted brown. Let sit on a paper towel to soak up butter.
– Lay apricots on a serving plate. Top each with ½ teaspoon of goat cheese.
– Press almonds onto the cheese. Sprinkle with thyme.

Notes: This recipe originated from She Keeps a Lovely Home, and was adapted to pair with Spicy’s Jubilé.  The original recipe called for unsalted whole walnuts and a drizzle of honey.
